Cabal #1: Jamaican Stew

Stage One in the Culinary Cabal was executed to perfection last night.

Jamaican Stew

6 cans kidney beans
2 cans tomato puree
3 pounds red potato(e)s, roughly diced
3 packages seitan, bite sized
3 large onions, chopped
8 ribs celery, chopped
6 tbs vinegar
6-8 tbs jerk seasoning
3 tbs brown sugar
3 jalepenos, chopped
everything else in the fridge: zucchini, carrots, bell peppers, green beans
water to desired thickness

Throw everything in a pot, bring to boil, reduce heat, let simmer 1-2 hours. This is slow cooker friendly, too, if you're into that.

We also made some cornbread that went well with this; recipe forthcoming?

In the future, either Jamaican Vegetable Patties or Jamaican Jerk Tempeh would be a nice complement! A mojito and coconut ice cream would have sent the cabal to some seriously new culinary heights (but we can't start off with the bar too high.)
